Saturday night we had a Mexican Fiesta complete with margaritas (non-acholic of course). The menu consisted of Enchilada cassarole, Taco Salad, refried beans and lemon cake for dessert! Everyone seemed to enjoy it and there wasn't much left over! For those of you that requested it, here is the Taco Salad recipe! Enjoy.
